Lotus Root with Peanut Soup (莲藕花生汤) is a classic Chinese soup that’s both nourishing and delicious. This slow-simmered soup is packed with earthy flavors from the lotus root, nuttiness and sweetness from the peanuts, and a rich umami flavor from the dried squid and oysters.
This is my dad’s recipe—something he’s made for years—and it is very similar to the kind of soup you get at Chinese restaurants here in Malaysia. It’s simple, traditional, and slow-simmered until everything is tender and flavourful.
Benefits of Lotus Root
Lotus root is rich in fiber and nutrients, and in Traditional Chinese Medicine (TCM), it’s considered to have neutral properties—meaning it’s gentle on the body and great for regular consumption.
You can simmer it slowly on the stove like how it’s traditionally made, or if you’re short on time, a pressure cooker or rice cooker works well too. Just adjust the cooking time and you’ll still get that deep, home-cooked flavour.
Pair it with steamed rice and a simple stir-fried vegetable dish, and you have a beautifully balanced, comforting meal.
