Chrysanthemum and Peach Gum Dessert Soup “Tong Sui”

Today, I’m sharing my recipe for Chrysanthemum and Peach Gum Tong Sui — another dessert soup that’s both tasty and good for cooling the body especially in hot or dry weather.

Chrysanthemum is great for cooling your body and help your body stay hydrated. I added red dates and goji berry to naturally sweeten the soup and support blood circulation. I love this dessert as it is light, has a lovely natural floral fragrance coupled with the interesting chewy, gummy, jelly-like peach gum.

You can enjoy this warm or chilled. I hope you find this dessert as comforting and refreshing as I do.

What is Peach Gum and How to Choose Them?

Peach gum is a natural resin that comes from peach trees. Once soaked and cooked, it has a soft, jelly-like texture.

Good quality peach gum comes in golden amber or light brown pieces. I personally prefer the more rounded ones—they turn out beautifully gummy after cooking. The ones with more jagged edges tend to soften into a jelly-like texture instead. Try to find cleaner versions with fewer impurities, so you don’t have to spend too much time removing black specks or dirt after soaking. Always rinse and soak at least for 6 hours or overnight before using.

What is Chrysanthemum and How to Choose Them?

Chrysanthemum flowers have a lovely natural floral fragrance with a hint of bitterness. For this recipe, you can use soft, full-bloom chrysanthemum flowers or Chrysanthemum Buds.

Chrysanthemum Buds:
These are tightly closed and smaller in size.

Soft Bloom Chrysanthemum:
These are fully opened flowers with soft, fluffy petals.

What to look for in good quality Chrysanthemum Flowers:

Color

  • Look for light yellow to pale gold flowers.
